Akira Back Paris opened in early 2022 inside the Prince de Galles hotel (Luxury Collection) as Korean-American chef Akira Back's first European outpost; he trained under Nobuyuki Matsuhisa. The kitchen serves modern Japanese cuisine with Korean and international touches — signatures include AB Tuna Pizza, Scallop Kiwi, Jeju Domi, the Brother from Another Mother roll, 48 Hours Short Rib and AB Beef Tacos. Design by London's Blacksheep agency emphasizes black tones, dim lighting, a brass sushi counter and a DJ, lending an energetic, club-adjacent feel unusual for Parisian fine dining. The restaurant holds a Michelin selection mention. Pricing is high (cold apps €21–80, mains €33–38, Wagyu €140) and hours are Wed–Sun, 7 PM–1 AM.
